A house full of company means so many things, the laughter, the late nights, the photo ops, the family time and….the food prep. Prior to company coming I spend hours in my kitchen, cooking, baking, making lists, then it’s trips to the grocery store, more trips (because my mad list making skills slack sometimes when they’re interrupted with “MomMomMomMOMOM!”) and the task of
jamming it all organizing it in my fridge.
I love every second of it!
I was born to entertain, cooking for people warms my soul. I always joke that on the inside I’m really a full of life Italian Mama – “Eat, Eat, Eat! Mangia, Mangia, Mangia!” If you’re here and I’m putting 82 different things in front of you to eat or offering up samples of my newest experiments, it’s not because I’m trying to sabotage your diet – it’s just how I say I love you.
Of all the things I make, there are a few that I receive requests for time and time again. My air buns, chocolate chip oatmeal cookies, brownie bites and primarily – my macaroni salad.
It is without a doubt the most requested food (and the fastest disappearing), my brother even swears that while others can get it close, none are quite the same. I don’t know how true that is, but I do add an extra dash of
spit love to each of his bowls.
Anyways, when I was thinking about the recipes I’d like to share with you all this month, this one came to mind. It’s the perfect summer recipe. Simple, quick, travels well and made with ingredients almost all of us keep in the house.
Our Family Stone’s Macaroni Salad
Macaroni Noodles 2 cups
Miracle Whip 3/4 cup
Mustard 2 tsp
Salt to taste (we only like about 1/4 tsp)
Pepper, ground to taste (we use approx 1/8 tsp)
Celery, chopped small 2 stalks
Cheddar Cheese, chopped small 3/4 cup
Dill Pickles w/garlic (important!) 3/4 cup
Ham, diced small (optional) 1 cup
1. Cook macaroni noodles according to package directions. DO NOT allow them to get mushy, your whole salad will be ruined if they get too soft.
2. Drain noodles into a colander and run under cold water until COMPLETELY cold. If your noodles aren’t cold when you add your cheese it will melt
3. In a small bowl combine Miracle Whip (mayo does NOT work), mustard, salt, & pepper. Stir to combine
4. In a large bowl mix together macaroni noodles, cheese, celery and pickles. Toss until well combined.
5. Add dressing to noodle mixture and stir until evenly distributed. Chill a minimum of 1 hour and then serve.
NOTE: If you add ham to your recipe I recommend reducing or eliminating the salt in the dressing. Ham is, in itself a very high sodium food and can over power the flavor of the dressing if there’s too much salt.
