Farmer Sausage, Spinach, Cheese Grab & Go Omelet Muffins – Recipe Love

We all know the old adage “Breakfast is the most important meal of the day”, and now, science even confirms that it’s true.  The trouble is sometimes having time for a nutritious breakfast seems too hard.  For Corey breakfast comes at 4am and the last thing he wants to do is to make anything to eat.  It needs to be quick, it needs to be easy and in this house it also needs to be quiet (4am guys, 4 AM!).  I spend hours in the kitchen trying this recipe and that, we’ve had winners, we’ve had wieners and a little of everything in between.

My biggest challenge is to create a breakfast that he can eat on the go that contains whole, clean, chemical free ingredients that also brings to the table the protein he needs to sustain the day.

For months I’ve been seeing recipes for “Grab and Go Omelet” style muffins, they all looked ok but nothing looked quite right.  Yesterday I had enough, I decided I had a good base idea of what ingredients I needed to make them stick and so I set off to experiment.

As luck would have it, my experiment turned out!  I posted the photo to Facebook & Instagram and in short order I was getting requests for the recipe.  I hesitated yesterday, as I was waiting to see what Corey thought, but the verdict is in – they’re a success and the recipe is a winner!

I also think this recipe will be very forgiving, use up what you have in the fridge, get creative and make these little guys your own.   Whether you change it up or keep it the same, when you give it a try please come back and let me know.

Farmer Sausage, Spinach, Cheese Grab & Go Omelet Muffins

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 10 Large or 12 Small

Ingredients

  • 8 Large Eggs (for a lighter version try using 4 whole eggs & 8 egg whites)
  • 3/4 Cup Cheddar Cheese, Shredded
  • 1/4 Cup Light Mozzarella Cheese, Shredded
  • 1/4 Cup Vidalia (white) Onion, diced fine
  • 1 Cup Farmer Sausage (we used one that's local that doesn't contain any chemicals)
  • 2 Cups gBaby Spinach Leaves, shredded
  • 8 Basil Leaves, chopped fine
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1 tsp Parsley, dehydrated

Instructions

  1. Pre- Heat oven to 350°F
  2. Grease regular muffin tins liberally**
  3. Heat a small skillet over medium heat, add farmer sausage & onion.
  4. When the onions turn translucent add in spinach and basil, reduce heat to medium and let leaves wilt.
  5. Remove mixture from pan to cool
  6. In a large bowl whisk together eggs, salt, pepper, garlic powder, onion powder and parsley
  7. When farmer sausage mixture has cooled, add it to the egg mixture and stir to combine
  8. Pour mixture evenly into muffin tins. For larger muffins I found it took 3/4c of mixture, for medium size 1/2c will do. They rise quite a bit while they cook
  9. Bake for 25 - 30 minutes or until a toothpick inserted comes out clean.
  10. For a crispy top broil for a minute or two but watch them VERY CAREFULLY
  11. Remove from pan and allow to cool. Store in fridge or freezer for easy reheating.

  2. These are just perfect for my family! We love omletes but hate how long it takes to make them. Now I can make them ahead of time and toss a big bag of them in the freezer so my gang can grab them when they need! Thanks for sharing this!
